Insect Warfare
Brewed with a roasted wheat that Troubadour Maltings roasted specifically for this beer, it is fermented with two saison strains, and dry hopped with English hops. This beer was then blended with another beer we make, Buried Sun, to add a low level of acidity (from our house mixed culture). Notes of dark chocolate, spicy and slightly briny saison phenols, and tart blueberry.

Yeast Profile
Blend of French and Baron saison along with our house mixed culture
Pitched French and Baron and fermented without temp control around 80F. This part of the beer ended up being 1/4 of the blend (the roast in the base beer was too acrid, needed balance). The rest (3/4) of the beer was a mixed-culture saison we make: Buried Sun.
I honestly don’t know why I get out of bed most days. But I’ve been experimenting with fermentation (professionally) for the last 6-7 years, so I guess I still give a shit about fermentation as it applies to beer. Seems like the Good Bugs folks do too. Plus Jensen asked, and I like him well enough.
