This mix was born out of a desire to reduce food waste. Our kimchi production yields excess fermented liquid, which would be bound for the drain. We have repurposed this juice into a delicious blend, we have nicknamed, “Kimchelada”
Tasting Notes: Brine / Roasted Tomato / Caramelized Citrus / Pickled Ginger / Sweet Soy / Umami
Kimchi juice ( cabbage, salt, water, wheat, red chile, soy), tomato puree, lime juice ( 9 0 % juice, water, citric acid), vinegar, ginger, soy sauce ( water, soybeans, black rice, salt, molasses, cultures), horseradish ( horseradish, water, citric acid), tamarind, garlic, sugar, rice flour, molasses, black pepper, clove, red chile
