“Really Crazy Flavor Profiles” with John Little of Harman’s Eat & Drink

This Thursday on Februaury 11th, Brewed Food founder Jensen Cummings will be collaborating with Chef John Little of Harman’s Eat and Drink. John recently just cooked at the James Beard House this past fall, and was awarded Zagat’s 30 under 30! What was your first “aha” moment with food and beer pairings?
When I was 19 I figured that I could make beer instead of asking friends to buy it for me. One of the first beers I ever brewed was a cherry chocolate stout. It was so good but unlike anything I ever had. I remember trying it with vanilla ice cream and it was unlike anything Ive ever had.

Why food and beer for you?
Beer can really push your imagination in cooking. Some brewers are doing some really crazy flavor profiles which makes you stop and think, “what am I going to pair with a beer that tastes like mole?” And maybe thats never something that you have ever thought about until now. But flavors are bold pairings can be extreamly unique.

What is “next” for food and beer?
The acceptance of paying more for beer and treating it more like wine. As this happens you will see more restaurants selling bottles of rare beers. You will also have staff as educated about beer as they are wine.
