To say that Jensen Cummings was born into the restaurant world is an understatement! Jensen is a fifth generation Chef and Restaurateur. His family opening their first restaurant, La Fond House in the year 1900 in Little Falls, Minnesota. Spending time working for his uncle’s restaurants and stint cooking along-side acclaimed chef Debbie Gold in Kansas City, Chef Cummings now calls Denver his home. During his time in the Mile High City his Chef credits include running the kitchens at Kevin Taylor’s, TAG Restaurant, ROW 14 and as Chef/Owner of Slotted Spoon. As CEO of Fortune Cookie Concepts, a premier culinary consulting firm, he has developed beer-centric projects like Rackhouse, The Lobby and Crafty Fox. Chef Cummings, a long-time beer aficionado, was also the first chef in Colorado to attain the rank of Certified Cicerone. His passion brought him to challenge his own preconceived notions of “cooking with beer, by utilizing brewing ingredients and techniques in his kitchen, thus Brewed Food was born. Bringing together chefs and brewers is giving way to a revolution to take beer & food to a level rivaling food & wine!
Staple Beer: I have so many long winded thoughts to answer this question. So many “well, when I’m in the mood for…”, but truly the beer that always seems to find its way into the fridge is Two Hearted Ale from Bell’s. It’s just done right!
Always on hand: Popcorn and gala apples are kept well stocked by my wife at all times.
Technique Tips: If you cut me I bleed soy sauce! It is the quintessential flavoring of my life.
Favorite Pairing: Old faithful for me is a proper Trippel with a bowl of, you guessed it, soy heavy noodles. You know, Lo Mein, Ramen, Udon. The new kid on the block is bacon, with basically any beer. Top of my list is a nice peppery-dry cured-hardwood smoked bacon with a Grisette. That slightly tart-yeasty-farmhouse style makes that porky goodness really pop!
