Hop Vinegar
Hop vinegar is similar to malt vinegar, which is made from unhopped beer, except we are using hops instead! It will give you more of a bitter vinegar, like you see in IPAs.
- White wine, 11.5% alc – (1500 ML)
- Hydrogen Peroxide – (1T)
- Cascade Hops, flowers, 7% or lower alpha acid – (86g)
- Water, 120°F – (1 C)
- White Wine Vinegar Mother – (1 C)
- 2 gallon bucket w/ lid
- Pint container
- Cheesecloth
- Twine
- Sanitize bucket. Add Peroxide and wine. Let stand for 20 minutes
- Add warm water to hops in pint container. Let stand 10 minutes
- Combine all ingredients in sanitized bucket
- Top bucket with cheesecloth, place lid on bucket (do not seal lid)
- Place in warm area (75-80F)
- Allow to ferment for 4-6 weeks
- Strain out mother, reserve in small amount of vinegar for next batch
