Hop Vinegar


Hop vinegar is similar to malt vinegar, which is made from unhopped beer, except we are using hops instead! It will give you more of a bitter vinegar, like you see in IPAs.

  • White wine, 11.5% alc – (1500 ML)
  • Hydrogen Peroxide – (1T)
  • Cascade Hops, flowers, 7% or lower alpha acid – (86g)
  • Water, 120°F – (1 C)
  • White Wine Vinegar Mother – (1 C)
  • 2 gallon bucket w/ lid
  • Pint container
  • Cheesecloth
  • Twine
  1. Sanitize bucket. Add Peroxide and wine. Let stand for 20 minutes
  2. Add warm water to hops in pint container. Let stand 10 minutes
  3. Combine all ingredients in sanitized bucket
  4. Top bucket with cheesecloth, place lid on bucket (do not seal lid)
  5. Place in warm area (75-80F)
  6. Allow to ferment for 4-6 weeks
  7. Strain out mother, reserve in small amount of vinegar for next batch
