Jensen Cummings

Founder, Brewed Food

To say that Jensen Cummings was born into the industry is quite the understatement. He is the fifth consecutive generation of restaurateur in his family. With his great great grandfather opening La Fond House in 1900 in Little Falls Minnesota. Great grandfather, grandfather and currently three uncles all took up the family biz as well. Jensen’s generation also includes his younger brother, and Chef Cummings is living up to the family heritage with his leadership in the industry! Leadership that has seen him helm some of the top kitchens in Denver, found a culinary coalition, Heroes Like Us, consulting on dozens of new restaurant openings and launch the Brewed Food movement!

Staple Beer: I have so many long winded thoughts to answer this question. So many “well, when I’m in the mood for…”, but truly the beer that always seems to find its way into fridge is Two Hearted Ale from Bell’s. It’s just done right!

Always on hand:

If you cut me I bleed soy sauce! It is the quintessential flavoring of my life. Popcorn and gala apples are kept well stocked by my wife at all times.

Technique Tips: If you cut me I bleed soy sauce! It is the quintessential flavoring of my life. Popcorn and gala apples are kept well stocked by my wife at all times.

Favorite Pairing: Old faithful for me is a proper Trippel with a bowl of, you guessed it, soy heavy noodles. You know, Lo Mein, Ramen, Udon. The new kid on the block is bacon, with basically any beer. Top of my list is a nice peppery-dry cured-hardwood smoked bacon with a Grisette. That slightly tart-yeasty-farmhouse style makes that porky goodness really pop!
