A young up and coming chef from a small town in Maryland. Opened one of esquire’ s Best New Restaurants, The Pullman in Glenwood Springs. Currently helming the kitchen at Harman’s Eat & Drink located in Cherry Creek North. Awarded Zagat’s 30 under 30, and recently cooked at The James Beard House. Spent time in kitchens with Norman van Aken, David Bouley, Joseph Lenn, Ryan Hardy, and Mark Fischer.

Staple Beer:

Depends on seasons, but I’d say Duchesse de Bourgogne is always a go to.

Always on hand:

The boring answer- cereal and milk. I honestly don’t cook a ton at home. Better answer- xo sauce. Its so versatile, and I love coating vegetables in it after work.

Favorite Pairings:

Fatty pork and a nice well rounded fruited sour makes my apron tight.

Technique Tips:

If your pairing beer with food its very similar to pairing wine. Search for acidity first. If a beer doesn’t have acid then heavy fatty dishes over powers the beer. For example most people love pairing stouts for desserts, but usually when you have ice cream with it you can’t taste the beer. Trust me I love a good stout float but Id never do it with a interesting beer that I want to enjoy.
