Chef de Cuisine, Biwa Izakaya

James is from Sacramento, CA, but started restaurant life in a dish pit on the Oregon Coast. Through a long series of events, including cooking at a biker bar in Texas and falling in love with yakitori in Japan, he is now the Chef De Cuisine at Biwa Izakaya in Portland, OR.
