After graduating from New England Culinary Institute and working with awarded chefs around the country Ian found a home in Boulder, CO. As a Chef (and brewer), Ian forged his way winning numerous awards like an appearance on National Television on The Cooking Channel’s Unique Eats, being highlighted in national publications including Tasting Table, Draft Magazine, and Sunset Magazine, and winning silver medal at the 2014 Great American Beer Festival for his LOCH Wee Heavy Scotch Ale.

Staple Beer:

Just one? Belux – my belgian style pale ale, a year round go-to.

Always on hand:

Naturally fermented pickles, spicy wood-roasted salsa, and honey all from our garden.

Favorite Pairing:

A crisp, hoppy American IPA with Al Pastor Tacos

Technique Tips:

Spice and hop additions in mash can build layers of flavors much like seasoning as you go in cooking.
