Yeast Profile
Wild Yeast strain cultivated from the gardens at Blackberry Farm. Flavor profile notes of red wine and finishes with cracked peppercorn. Medium flocculation.

Classic Saison fermented with our native yeast harvested from honeysuckle flowers, aged in an oak foeder, blended with Brett Saison barrel-aged 8 months in red wine barrels, with a touch of older and younger beers, for added complexity and roundness.
